This highly distinctive wine is made from one of the oldest grape varieties in the Cher Valley.

To the eye, it exhibits a deep garnet-red robe. To the nose, its reveals intricate aromas of black fruits with hints of violet and liquorice, toasted notes and a dash of chocolate. On the palate it is powerful and buttery with an indulgently long finish. A wine for laying down no more than a few years, ideally paired with stuffed poultry dishes, game meat and strong cheese during special occasions or why not corporate get-togethers.

Mechanical harvesting using a de-stemmer.
Pre-fermentation cold maceration (or cold soak) for four days to extract the aromas.
Placed in stainless steel vats for alcoholic fermentation at 25°C for six days
Pressing and blending of the first press juice with the free-run juice.
Malolactic fermentation at 20°.
Wine is cold-stabilised to encourage tartrate crystals to precipitate out.
Cross-flow filtration followed by storage in tanks.
Ageing in concrete and stainless steel tanks.
